Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
In an oven-safe skillet, heat 1 tablespoon of butter over medium-high heat.
Sear the chicken thighs for 4 to 5 minutes on each side until they’re golden brown. Transfer them to a plate.
Lower the heat to medium, then add the remaining tablespoon of butter.
Sauté the minced garlic for 30 to 60 seconds until fragrant.
Whisk in the honey, soy sauce, thyme, and ginger until the mixture is smooth. Allow it to simmer for about 1 minute.
Return the chicken thighs to the skillet, spoon the sauce over them, and bake for 20 to 25 minutes until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 3 to 5 minutes before serving.
