Heat olive oil in a large pot over medium heat.
Add sliced sausage, onion, and bell pepper. Cook until the sausage is browned and the vegetables are tender (about 5-7 minutes).
Add garlic to the pot and cook for another minute until fragrant.
Stir in diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring everything to a boil.
Add uncooked penne pasta to the pot. Stir well, reduce heat to low, and simmer for 10-12 minutes or until pasta is cooked through. Stir occasionally to prevent sticking.
Remove from heat. Stir in Parmesan cheese until melted and creamy.
Serve warm, garnished with fresh parsley if desired.
