Classic Garlic Parmesan Chicken and Rice

Ingredients

  • 1.5 lb chicken (cut into 1-inch bite-sized pieces for even cooking)
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 1/4 tsp dried thyme
  • 2.5 tbsp butter (I prefer Kerrygold unsalted butter for this)
  • 1 medium onion (finely diced into 1/4-inch pieces)
  • 1.5 tbsp garlic (freshly minced)
  • 1.5 cups long-grain white rice
  • 3 1/4 cups chicken broth (I use Swanson Less Sodium for better salt control)
  • 1/2 cup parmesan cheese (freshly shredded for a smooth melt)
  • 2/3 cup heavy cream
  • 2 tbsp fresh parsley (finely chopped)

Instructions

    Pat the chicken pieces dry with paper towels, then season them generously with paprika, garlic salt, black pepper, and dried thyme, tossing to coat evenly.

    While the chicken seasons, finely dice the onion into 1/4-inch pieces and mince the garlic fresh.

    Melt 2.5 tablespoons butter in a large pot over medium-high heat until foaming subsides.

    Add the seasoned chicken pieces and cook for 5-6 minutes, stirring occasionally, until the chicken is lightly browned on the outside.

    Transfer the chicken to a plate and set aside.

    In the same pot with the remaining butter, add the diced onion and cook for 3-4 minutes, stirring frequently, until softened and fragrant.

    Add the minced garlic and cook for 1 minute more until aromatic.

    Return the seared chicken to the pot with the aromatics.

    Stir in the rice, coating it thoroughly in the butter and aromatics, and toast for 1-2 minutes until it becomes slightly fragrant and translucent at the edges.

    Pour in the chicken broth, bring the mixture to a boil over high heat, then immediately reduce the heat to low, cover with a lid, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

    Remove the pot from heat and let it sit, covered, for 2 minutes to stop the cooking process.

    Gently stir in the heavy cream and freshly shredded parmesan cheese until fully combined and creamy.

    Transfer the garlic parmesan chicken and rice to serving bowls or plates, distributing the chicken pieces and creamy rice evenly.
