Cheeseburger Rice

Ingredients

  • 1 pound lean ground beef
  • ½ cup diced yellow onion
  • 2 cups low-sodium chicken or beef broth
  • 1 cup uncooked white long grain rice, rinsed
  • 8 ounce can tomato sauce
  • 1 Tablespoon Worcestershire sauce
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons paprika
  • 1 ½ teaspoons oregano
  • ¼ teaspoon red pepper flakes
  • 2 cups shredded cheddar cheese
  • 1 Tablespoon dried parsley

Instructions

    In a large skillet, brown and crumble the ground beef along with the diced onion until fully cooked.

    Drain any excess grease and put the beef back into the skillet.

    Add in the broth, rice, tomato sauce, Worcestershire sauce, garlic powder, onion powder, paprika, oregano, and red pepper flakes.

    Bring to a boil on high heat.

    Lower the heat to low, stir one last time, cover with the lid, and cook for about 15 minutes or until the rice is cooked. Do not remove the lid while the rice is cooking.

    When ready, fluff the mixture with a fork.

    Stir in 1 cup of shredded cheddar cheese, scraping the bottom of the pan to remove any rice that might have stuck.

    Test to see if any salt is needed.

    Sprinkle the remaining shredded cheese on top.

    Remove from the heat and cover until the cheese has melted.

    Top with dried parsley (optional) and serve.
